Cold competition dishes: frosts and clarification
Focus of the course:
- Make a pot
- Clarify a jelly
- Compare jelly glued with gelatin and glued with natural gelling agents
- Make cold and warm fillings
- Use decorating dough for small pieces
- Model a decorative piece in margarine
The internships of the Companion Union are organised on a voluntary basis by Companions for Young Travellers and open to apprentices and professionals who wish to discover the Companion.
