Cold competition dishes: frosts and clarification

Focus of the course:

  • Make a pot
  • Clarify a jelly
  • Compare jelly glued with gelatin and glued with natural gelling agents
  • Make cold and warm fillings
  • Use decorating dough for small pieces
  • Model a decorative piece in margarine

 

The internships of the Companion Union are organised on a voluntary basis by Companions for Young Travellers and open to apprentices and professionals who wish to discover the Companion.
